10K LIVING ROOTS CHALLENGE RACE

WEDDING

  • This was a disaster for Vinnie as he couldn't eat the bread or rice

INDIA

    • Rarer, autoimmune form
    • Had it since she was 11 years old

  • When you are used to living on grain and sugar, cutting it out may make you feel a bit sick or lethargic

COGNITIVE DISSONANCE

  • At Princeton, Vinnie’s seat on the panel was empty
    • They got Vinnie to the panel late
    • It wasn’t his fault — he always runs early!
    • He didn’t know what was going on, who else was on the panel, etc. 
  • One dietician on the panel said eating more carbs (using them to exercise etc.) will burn fat 
    • She was PUSHING a high carb diet 
    • Vinnie likes the lady, but did not like what she was pushing 
      • Ever since the conference, she has been looking into high fat-low carb and has started to agree with it and ask questions!
  • Once you know information and can’t un-know it, but still have to push what is wrong, THAT is cognitive dissonance 
    • Same thing happened to Kate Thompson when she was working for Weight Watchers
      • She had to quit once she realized the truth was not what Weight Watchers was preaching

POOR AMAZON REVIEW

  • Although most reviews are good, there are some people who don’t like Vinnie or the book 
  • DP Brown
  • Heard Vinnie on Adam Corolla show
  • Said you will only get 8 minutes of info per episode, rest is bologna 
    • Listen to ANY Friday show with a Doctor to see how wrong that is 
  • Says book says nothing meaningful 

STEVE PARK

  • Knows how to get lean
  • Believes that eating high carb is the best way to sabotage your figure and your health
    • Not only does it hurt your figure, but that is just poor nutrition 
    • Eventually, eating poorly will catch up with you 
  • Used to eat a lot of grains and sugars, now is low carb

THE LAST 5 LBS

  • Lee is middle-aged and has a bit of a beer gut (even though he doesn't drink) and wants to get rid of that last bit
  • 5'9 & 170 (he has lost 10 lbs effortlessly NSNG )

WHAT DOES LEE EAT EVERY DAY?

  • He meal preps on Sunday for the week 
  • Breakfast: 3 eggs and 2 sausage patties, coffee with heavy cream (usually 2 cups)
  • Lunch: Chicken breast/thighs and vegetables 
  • Snacks: nut butter (almond), almonds and cashews
  • Dinner: meat and vegetable 

VINNIE'S ADVICE

  • Once you plateau, the weight comes off very slowly
  • Vinnie often advises those who plateau to cut out the nut butters and watch the dairy
  • You can start throwing dairy back in your coffee once the weight comes off

VINNIE AFTER CANCER

  • After leukemia (and during) people kept telling Vinnie he needed to do certain things
    • Eat macro-diet and micro-diet, juice everything, have wheatgrass, etc or he would die
  • He went to his hematologist and asked how much of it was the truth
    • His incredibly intelligent hematologist simply said "Stay away from sugar!"
      • Everything is pointing towards sugar as one of the things that cancer loves 

SUGAR AND CANCER

  • Sugar does not cancer, but cells that make tumors and such are fermentors 
    • This means they will gain energy from glucose fermentation
      • Sugar feeds them
    • This is a prime fuel, but not the only fuel 
  • Our red blood cells are constantly making a little lactate
  • Tumor cells have defective mitochondria so they make lots of lactate

WHAT CAUSES CANCER?

  • Radiation
  • Chemicals in the environment
  • Chronic inflammation
    • ex: Lung cancer comes from lung inflammation which is worsened by smoking
  • Age 
  • Mutations in genome that we inherit
    • People are pre-disposed to cancers 
    • genome is your set of genes and differences / mutations in them

DOES KNOWING ONE'S GENETICS HELP WITH DISEASE RISK?

  • Knowing can be dangerous because then you have a big excuse not to try
    • For example, if you know you have obesity genes in your family, you will just say you're predisposed and can't help it, and eat junk food! 

WHAT ARE SOME OF VINNIE'S FAVORITE THINGS TO EAT OUT?

  • Vinnie and Serena eat at restaurants a lot now that Tallulah is at college
    • Lunch is always out and now dinner is always out 
  • They go to nicer restaurants because they get better food
    • Vinnie loves Marmalade Cafe because he gets good fish, or a bun-less hamburger 
  • Loves broccoli! 
  • Hipster-type gastro-pubs are really big but have NSNG options
  • Goes to Chipotle, gets a bowl without rice and without corn
    • Chicken/beef, beans, sour cream, cheese, lettuce, salsa, guac
    • This is a good fast food option
  • The Counter is also very good
    • Made-to-order burgers are a good way to go (just don't get a bun!)
  • If you can't eat gluten, make sure that your vegetables at restaurants aren't cooked in pasta water or anything like that

  • Similar story to Vinnie but is smarter and figured it out quicker 
  • Chris started falling apart (brain fog, fatigue, low libido) once he came to the US and started eating in the cafeteria at work
  • Was riding bikes and racing a lot 
    • Was nearly a pro mountain biker (Category 1)
  • Full-suspension bikes are fun!
  • Doctors were not helping him so he had to find out things for himself 

GETTING SICK

  • Chris had incredible fatigue -- not normal athlete fatigue 
    • in the afternoon he couldn't keep his eyes open, but at night being incredibly hyper
      • Vinnie remembers this too
    • would have to sleep at work
  • Both made excuses for the reason they were feeling so tired and passed it off as normal
    • what IS normal these days?
  • Cortisol follows circadian rhythm, highest in morning, lowest at night -- therefore, a good and normal sleep schedule is necessary 
    • To fix one's circadian rhythm, one must realize what first affects it 
      • Exposure to sun, blue light, etc. 

DIET

  • He was eating lots of sugar and grains
  • Took him awhile to figure out that they were hurting them due to the fact that a high carb diet is preached to athletes
  • Went cold turkey 
  • Bloating went away almost immediately, started to feel better
  • Had some left over symptoms that resolved as he kept with it 

A DAY IN THE FOOD-LIFE OF CHRISTOPHER KELLY

  • Doesn't insist on eggs for breakfast 
    • Eats leftovers for breakfast 
  • Eat what you have!
  • Vinnie doesn't eat lunch often because he has big breakfasts and his body is using the fat
  • Intense athletes have to be careful that they are eating enough even if they aren't hungry

RUNNING SHOES

  • Running shoes are baloney for the most part
  • Running shoes wear out at the same place, proves that your running form needs to change 
  • flat soled sneakers tend to be better, minimalist-type shoes, if you run correctly 

MUSCLE WHILE RUNNING

  • Running is important but is not the only thing
  • Muscle allows your body to extend backwards, the power comes from the fascia 
    • look at MLB pitchers for instance!
    • "elastic strength"
  • Bruce Lee: "I always had my strongest punch with my left toe"
    • A punch starts in your left big toe 
  • Running comes from the hips, among other parts 
    • "Sacrum" - near your naval is the sacred center of your body

LIFESTYLE CHANGE V BEING ON A DIET 

  • Vinnie never wanted to convey NSNG as a 'diet'
  • It is a lifestyle
    • It's not a "you can eat this much of this, none of that etc"
  • People fall into the grey area: potatoes ok? etc etc
    • Depends on the individual

HOW NECESSARY ARE SUPPLEMENTS REALLY?

  • Kristin takes magnesium, and a probiotic, and omega-3
    • Is this enough? Is this a waste of money?
  • PVC was created so people didn't waste money and got the supplements they needed
  • Some supplements with bad stuff ARE a waste of money, but without the sand and silica and such, they are not a waste 
  • We can't get all of our nutrients from food so supplements really are important
    • Between preservation, diet, and how things are grown, no diet is perfect
  • There is an argument really for any supplements -- depends what each individual really needs
    • Just like how not everyone needs 8 glasses of water a day
      • Some people need 4, and some need 12!

  • A team of 22 scientists did analysis where they looked at ~800 different studies and research that OTHER scientists have done 
    • this is flawed because they are not controlled, just observing experiments 
  • You can change your numbers to see what you want to see and correlate what you want to correlate

  • Foods can be processed many ways to fit ANY label they want

  • Leptin, a brain hormone, controls when you eat, how much, and how full you feel

  • Therefore, one has to control one's leptin levels to help their metabolism
