KATHERINE'S STORY

  • She used to be the calorie queen -- she'd eat any and all sweets.
  • Despite working in medicine, she'd eat cupcakes whenever offered.
  • One day, she ate a cupcake and had a severe allergic reaction.
    • It didn't have anything in it that she hadn't had before, but it kept happening.
      • They didn't know what was wrong with her, but they gave her medication -- like putting a bandaid on a bleeding wound without figuring out what caused it.
  • Katherine decided she needed to try something to stop the allergic reactions and her stomach issues. She began by trying paleo for one month.
    • This was mostly meat, fish, veggies and fruit.

BATTLING ALLERGIES

  • The paleo diet took away the allergic reactions and her stomach pain, but as soon as she'd start 'cheating,' by eating anything she wanted, she'd get the pain and allergic reactions back.
    • When she was eating badly, she was on TONS of medications and her environmental allergies.
    • She also found out she's highly allergic to soy -- at restaurants, the meat must be cooked on foil to avoid touching the grill.
  • If she has too much dairy, her environmental allergies kick back in.
  • Much of this has to do with the body's inflammation, and when she is careful about what she eats (very low carb, no sugar, no grains), the inflammation is low enough that these allergic reactions don't really surface.
